I’ve joined the smoothie-for-meal wagon. It took me a while to get into the idea of substituting chewable food with just liquid. Food textures are like 65% of why eating is so enjoyable, am I right?? However, lately I’m finding that a good, nutritionally-complete, protein-rich, delicious, and beautiful smoothie can absolutely hit the spot. This green smoothie has been an all-around winner in the aforementioned categories. Smoothies are great because you can do whatever the heck you want with them, so let your creative juices flow, but if you’re making it today, make sure you include the kale or maybe spinach, because we’re all Irish on St. Patty’s (so they say).
nutty kale and banana smoothie
1 frozen banana
1 handful (approximately 1.5 cups) fresh baby kale
1-2 Tbsp natural peanut butter or almond butter
2 Tbsp plain Greek yogurt
6-8oz almond milk (or soy milk, for more protein!)
1 Tbsp chia seeds
Place all ingredients in a blender. Blend until desired consistency is reached. Pour into cup and enjoy!!
